Flor og Fjære, Botanical gardens on Sør-Hidle island, Norway
Flor og Fjære is a botanical garden on Sør-Hidle island featuring a wide range of plants collected from around the world, including roses, cacti, and tropical species. The garden showcases how these specimens thrive in a northern climate where such growth would typically be challenging.
Åsmund and Else Marie Bryn founded the garden in 1965 on a windswept property, starting an ambitious transformation of the landscape. The project has grown and evolved through three generations of family stewardship to become what exists today.
The restaurant blends Norwegian cooking with global influences, bringing in Chef André Mulder and his team from Thailand each summer to create dishes that reflect both traditions.
Visiting requires advance booking and a 20-minute boat journey from Stavanger to reach the island location. The site operates Monday through Saturday, and early reservation is recommended to secure a place.
The property is managed by the family who have refined their growing and care methods over decades through hands-on work. This accumulated knowledge allows unusual plant species to survive and flourish in an unlikely location.
