L'Amaryllis, Two Michelin stars restaurant in Saint-Remy, France
L'Amaryllis is a two-Michelin-star restaurant housed in a renovated 19th-century watermill beside a millstream. The space includes a private garden where the kitchen grows vegetables and herbs used throughout the seasons.
The site operated as Moulin de Martorey before becoming L'Amaryllis in 2010. The transition took place under chef Cédric Burtin, who developed his skills in prominent Lyon kitchens.
The kitchen draws on French culinary methods and sources ingredients from the Burgundy-Franche-Comté region, which shapes what you experience on the plate. The menu reflects seasonal availability and local product quality, making each visit different depending on what the area produces at that time.
The restaurant is open Wednesday through Saturday with lunch and dinner services at specific times. Reservations are recommended given the limited seating and schedule.
The name L'Amaryllis refers to a flowering plant that links to the garden and botanical world surrounding the place. This choice reflects how deeply nature and growing things shape the restaurant's approach to food.
