ROS[O] is a contemporary restaurant in Mûrs-Erigné with a sparse interior design and tall windows. The dining space overlooks the Louet river and its surrounding valley.
Tony Pasquier opened the restaurant after working as head chef at Casa Corneille. He wanted to create a modern dining space in the Loire Valley.
The kitchen blends French cooking techniques with what's available each season from local suppliers. Diners taste how the menu adapts throughout the year to reflect what grows and is harvested nearby.
It works best to visit in the evening to enjoy the river views from the windows. Booking ahead is important since the dining room is small and seats fill up quickly.
