The restaurant opened in summer 2003 following two years of planning and construction led by architects from Estavayer-le-Lac. Philippe Gendre's vision shaped the original concept and how the place was designed.
The kitchen brings together cooks from Martinique, the Dominican Republic, and Peru who prepare food based on recipes and techniques from their home regions. Their presence shapes what appears on the menu and how dishes are made.
