De Kas, Farm-to-table restaurant in Amsterdam, Netherlands
De Kas is a restaurant in Amsterdam housed within a glass greenhouse surrounded by gardens. The kitchen uses vegetables, herbs, and edible flowers grown in these gardens and nearby fields.
The building was constructed in 1926 as a municipal greenhouse and converted into a restaurant in 2001. This transformation preserved the original glass structure and made it the core of the dining experience today.
The restaurant connects sustainable cooking with its setting: diners sit surrounded by growing plants and experience how ingredients are produced right before them. This direct link between cultivation and preparation creates a sense of where the food comes from.
The dining spaces have different areas, some with views toward the gardens and others under the glass roof. It makes sense to plan reservations in advance to secure a good spot within the greenhouse.
The restaurant grows more than 300 varieties of vegetables and herbs, both within the greenhouse and in surrounding polder fields. This diversity means the menu constantly shifts with the seasons and what is ready to harvest.
