The Bisschopsmolen is a watermill along the Jeker River in Maastricht featuring a preserved water wheel and millstones that still grind grain. The building integrates milling and baking operations in one location.
The site traces back to the 7th century and became church property in 1099 following Duke Godfrey of Bouillon's death. Since then it has served as an episcopal mill operation that shaped local commerce.
The mill houses a traditional bakery where artisans transform freshly ground spelt flour into regional bread varieties. Visitors can experience firsthand how grain becomes the bread sold on-site.
The mill sits along the river and is reachable on foot via the nearby stone bridge. Visitors should expect uneven floors and damp areas, making sturdy footwear advisable.
Following its 2004 restoration, the mill became the first in the Netherlands dedicated exclusively to spelt flour production. This ancient grain had nearly disappeared and was deliberately revived here.
