Dikker & Thijs

Dikker & Thijs is a restaurant occupying multiple floors of a former insurance building at the corner of Prinsengracht and Leidsestraat. The space offers views over the Amsterdam canal system and connects to an adjoining hotel.

Frederik Wilhelm Dikker founded a delicatessen in 1895, which later merged with Henri Thijs, who had trained under French chef Auguste Escoffier. This partnership established the foundation for the restaurant's later development at this location.

The restaurant received its first Michelin star in 1957 during the Netherlands' inaugural Michelin ceremony, maintaining this recognition until 1962.

The restaurant is located near major museums and shopping streets, making it easily accessible from the city center. The busy corner location is worth considering when planning a visit to the area.

An upper-floor kitchen produced items for the delicatessen counter on the ground floor, creating a vertical integration of fine dining and retail within the same building. This unusual arrangement reflected the innovative business approach of the original founders.
