De Karmeliet was an upscale restaurant in Sint-Anna that served French gourmet cuisine in an elegant dining room for roughly 50 guests. The establishment offered carefully composed menus paired with selections from an extensive wine list.
The restaurant opened in 1983 and received its first Michelin star in 1985, eventually rising to the top of Belgian fine dining. It closed in 2016 after holding three stars for many years under head chef Geert Van Hecke.
The name refers to a nearby Carmelite convent in the neighborhood. The kitchen celebrated regional Belgian ingredients refined through French cooking techniques.
The restaurant required advance reservations well ahead of time, as seating was very limited. A visit demanded commitment to a meal that lasted several hours.
Among Belgium's three Michelin-starred restaurants, this was the only one in Bruges for a long time. Its closure in 2016 marked the end of a culinary era for the city.
