The property was first documented in 1561 and took its current name in 1671 when Johann Kappler acquired it and began brewing operations. Over subsequent centuries, it remained controlled by brewing families who sustained and expanded both production and the establishment's standing.
The inn takes its name from the brewer who acquired it in the 1600s and shaped its identity through his family's long tenure.
