Chef Thierry Blouet founded the restaurant in 1991 in a former mansion and shaped it into a place where French and Mexican cooking traditions meet. This merger of two culinary heritages became the defining characteristic from the start.

The kitchen merges French cooking methods with regional ingredients like chicatanas and chintextle peppers, creating a distinct culinary identity. This blend of classical technique and local flavors defines how people think about eating here.

The restaurant occupies a restored colonial building in the city center and operates daily, though advance booking is highly recommended to secure a table. Dress is casual elegant, and planning ahead helps ensure a comfortable seating experience.
