La Capitelle

La Capitelle is a fine dining restaurant located in the village of Mirmande in France's Drôme region. The establishment features a vaulted dining room with a fireplace and an outdoor terrace, each space with its own character and view.

The name refers to traditional dry stone shelters that were once built by shepherds and winegrowers in the Drôme region as refuge from the elements. These structures inspired the identity of the modern restaurant.

The chef combines ingredients from the surrounding Vercors and Provence regions with modern cooking techniques, offering a contemporary take on local French cuisine. What appears on the plate reflects what each season brings to the area.
