Le Sénéchal

Le Sénéchal is a restaurant and hotel housed in a timber-framed building in the medieval village of Sauveterre-de-Rouergue. The property offers eleven rooms with private bathrooms and an indoor pool, while the dining space welcomes guests in both indoor and outdoor areas.

The building was constructed as a seneschal's residence, an important administrative post during medieval times. Over decades, the place evolved into a culinary center of the region while preserving traditional cooking techniques.

The kitchen focuses on regional ingredients from Aveyron and works directly with local producers in the area. Visitors can see how traditional preparation methods of the region are expressed in the dishes.
