Osteria Quattro Archi
Osteria Quattro Archi is a restaurant outside Milo on the road to Linguaglossa, with three rooms built in natural wood. The restaurant serves wood-fired pizzas, homemade pasta with local mushrooms and southern Italian classics like caponata, paired with a wine list of over 250 bottles, mostly from Sicily's volcanic slopes.
The restaurant was founded in 1995 by Saro Grasso, who wanted to share the local flavors of his mountain region. His vision of cooking based on local ingredients in partnership with small farmers has developed over the decades into a recognized model for sustainable gastronomy.
This restaurant embodies the connection between mountain and plate that defines this Etna region. In its simply furnished rooms with wood accents, you sense the transmission of local recipes and the partnership with small farmers that shows in every dish served.
The restaurant is open Thursday through Sunday evenings, with Sunday lunch available, and seats about 80 people in a simple, welcoming setting. It is accessible for people with disabilities, allows dogs, and offers menus for vegans, vegetarians, and those avoiding gluten.
The chef Lina Castorina has long been responsible for preserving recipes from the Etna area and brings visitors close to local products like donkey milk, which is characteristic of the region. This focus on unusual local ingredients sets the place apart from typical Sicilian restaurants.
