La Couleuvrine

La Couleuvrine is a restaurant and hotel set inside a medieval tower that forms part of Sarlat's old ramparts. The establishment has 26 rooms where original stone walls meet modern comfort, and guests can dine either indoors or on the terrace overlooking the medieval streets below.

The tower dates to the 15th century and once served as a defensive position when armed conflicts threatened Sarlat during the 16th century. The cannons that gave this place its name were part of the weapons system used to protect the city's fortifications.

The name comes from the cannons once used to defend this part of the city during 16th-century conflicts. Walking through the old stone rooms today, you can still sense that martial past in the building's thick walls and narrow spaces.

The restaurant operates Tuesday through Saturday with seating available both inside and on the terrace. The location is within the medieval old town, making it accessible on foot from most areas of Sarlat's center.

The kitchen draws on regional ingredients from the Dordogne Valley and is led by a chef recognized officially as a Maître Restaurateur. This status is granted only to cooks who meet rigorous standards for culinary craftsmanship and local sourcing.
