Rúibín was opened by Alice and Richard, who spent time traveling and learning about food and hospitality before launching the restaurant. They chose the dockside location deliberately, in an area that has long been a working part of Galway's waterfront.
Rúibín sits along the docks in Galway, and the upstairs windows look out directly over the water and the boats below. The menu shifts with the seasons, as the kitchen relies on fresh ingredients from nearby farms and markets.
The restaurant is open from noon until late, so it works for both a midday meal and an evening dinner. Booking ahead is recommended, especially on weekends or when events are taking place in the city.
Richard greets guests in Irish when they arrive, which is something you rarely encounter in an everyday restaurant setting. Galway is one of the few cities in Ireland where Irish is still regularly spoken in daily life, and this small gesture reflects that.
