Kuchmistrai is a restaurant housed in the former kitchen building of the Zypliai manor complex, in the Lukšiai area of Lithuania. The space also contains a museum dedicated to the Zanavykai region, so the dining room sits within a broader historic site.
The Zypliai manor complex was built around 180 years ago and once belonged to Lithuanian nobility. The building that now houses the restaurant served as the estate kitchen, and was later restored and repurposed as part of a broader effort to revive the site.
The name Kuchmistrai comes from an old Lithuanian title given to the head cook of a noble household, and the restaurant draws directly on that tradition. The menu reflects local farming and old cooking methods like smoking and open-fire baking, which are still used today.
The restaurant is located near Šakiai and is easiest to reach by car. Reservation is recommended for tasting menus and group events, and the building is accessible for visitors with reduced mobility.
One dish on the menu, veal tenderloin prepared after a recipe called Zavadzka and served with anchovy sauce, comes from an old noble kitchen tradition that had largely been forgotten. The chef Artūras Rakauskas researched these lost recipes and brought them back to the table.
