Fairmont Grand Del Mar, Hotel in San Diego, US
Fairmont Grand Del Mar is a large resort-style hotel north of San Diego, set within a natural canyon area near Los Peñasquitos Canyon Preserve. It features four outdoor pools, a spa, six restaurants, a private golf course, and a range of rooms, suites, and private villas.
The hotel was built in the style of a Mediterranean estate, with arched doorways, pillars, and French doors that set the tone for the whole property. Over time, it grew to include a private golf course designed by Tom Fazio and a restaurant, Addison, that went on to earn three Michelin stars.
The hotel sits away from the center of San Diego, so having a car or using the resort's house car service makes it easier to reach nearby beaches and attractions. A visit to the spa is best planned on a weekday, when it tends to be less busy.
Addison, the restaurant on the property, is one of only a handful of three-Michelin-star restaurants in all of California, making it a rare find within a hotel setting. The tasting menu draws on French cooking techniques combined with ingredients sourced from Southern California.
