High West Distillery is a whiskey production facility in Wanship, about 25 minutes north of Park City, Utah. The site includes production buildings with distilling equipment, a tasting room, a restaurant, and a retail shop, all situated in structures resembling a mountain lodge surrounded by snow-covered aspens and a gentle stream.
The operation was founded in 2007 and became the first legal distillery in Utah since 1870. Founders David and Jane Perkins started as a small operation with a simple still in a converted stable in Park City before relocating their main production to Wanship.
The name refers to Utah's early whiskey-making heritage and the mountainous region where it stands. Visitors can observe how the craft has become woven into local identity, with staff sharing stories about the state's distilling traditions during tours and tastings.
Book a tour reservation in advance as visits fill up quickly, and arrive early to allow time for the shuttle ride from the parking area to the main facility. Tours last about one hour and fifteen minutes, run several times daily, and conclude with a tasting of various whiskeys in the tasting room.
The water source comes from the Oyster Ridge aquifer and contains minerals that distinctly influence the whiskey's flavor profile. The copper still was imported from Scotland and plays a key role in creating the craft's signature taste that varies with each batch.
