Roman settlers established a station along Via Traiana here in the 2nd century. Norman rulers later built the settlement into a fortified town and shaped its architecture.
The town name derives from Latin Caereae Joli, referring to an ancient grain deity. Residents speak an Apulian dialect, and on market days farmers bring fresh produce into the streets of the center.
