The restaurant opened in 1996 under the ownership of Ronald Voogel and Esther de Wit, who continue to run it today. Chef Jan Sobecki took over the kitchen in 2010 after training in notable establishments across New York, Chicago, and Paris, leading to the restaurant's second Michelin star in 2011.
