The establishment opened in December 2010 under Danish chef Esben Holmboe Bang. It quickly became known for pioneering an approach to Nordic cooking that placed local and wild ingredients at the center of fine dining.
The name comes from Finnish and means Mother Earth, expressing how the kitchen values raw materials gathered directly from nature around Norway.
The restaurant only accepts reservations, so advance booking is essential. Service runs Monday through Friday with a single seating each evening.
The restaurant relocated to a new address in 2019 and had to rebuild its standing afterward. This move shows how the team managed to maintain its standards in a different location.
