Din Tai Fung, Taiwanese restaurant in Fuqiu Village, Taiwan.
Din Tai Fung is a Taiwanese restaurant in Fuqiu Village known for its handmade xiaolongbao, small dumplings filled with hot broth and seasoned pork. The menu also includes noodle dishes and side dishes, but the dumplings remain the central offering.
The business opened in 1958 as a cooking oil shop and later shifted to serving food in the 1970s. Over the following decades, the art of making xiaolongbao was refined until it became the defining element of the place.
The cooks work behind a glass wall, so guests can watch each dumpling being folded by hand before it reaches the table. This open kitchen setup is part of what draws people to the restaurant and makes eating there feel different from a regular meal.
Queues outside the door are common, especially on weekends and around midday, so arriving early in the day generally helps. The entrance is wheelchair accessible, and credit cards are accepted.
Every dumpling is folded with exactly 18 pleats, a standard that is checked on every single piece before it leaves the kitchen. The dough and filling are also weighed separately for each dumpling to keep every portion the same.
