Grimaldi's Pizzeria, Coal-fired pizzeria in Quarry Village, San Antonio, US.

Grimaldi's Pizzeria is a pizzeria in San Antonio that specializes in Neapolitan-style pizzas baked in coal-fired ovens at 600 degrees, using hand-tossed dough with fresh mozzarella and house-made tomato sauce. The space features brick walls, wine bottle chandeliers, and tin ceilings inside a spacious dining area with outdoor seating available.

The restaurant carries forward traditional pizza-making methods from its Brooklyn origins, using coal-fired ovens that operate with the same techniques as the original location. This approach to maintaining authentic Neapolitan methods has been central to the establishment's identity since its arrival in San Antonio.

The restaurant serves Neapolitan-style pizzas and fills its dining space with wine bottle chandeliers and historic New York photographs that connect visitors to the tradition's origins. This setting creates a bridge between Italian and American pizza culture that many guests find meaningful to their experience.

The pizzeria is located in Quarry Village and staff can help guide you to tables and answer questions about the menu. Since pizzas are prepared individually in the ovens, expect some wait time during busy periods, which is normal for this style of cooking.

The water used to make pizza dough is specially treated to match the mineral content of New York City tap water, preserving the authentic taste that customers expect. This attention to such a small detail shows how seriously the team takes their Brooklyn heritage.
