Le Belvèdère

Le Belvèdère is a restaurant and hotel perched on the edge of a limestone canyon in Bozouls, with nine guest rooms and a dining room seating about thirty people. The setting overlooks the gorge while the kitchen prepares seasonal dishes throughout the year.

Guillaume Viala founded Le Belvèdère in 2004, transforming a local inn into an upscale culinary destination. The establishment later earned a Michelin star for its cooking.

The restaurant celebrates Aveyron's food traditions through its menu and builds direct relationships with local farmers and small wine makers from the area. Diners experience the connection between kitchen and countryside in every course.

Visitors should know that the clifftop location means paths may be steep and views toward the gorge are commanding. Booking ahead is wise, especially for groups or on weekends.

The property features a specialized wine cellar managed by Christine, offering carefully selected wines from the region. This collection was specifically curated to pair with the kitchen's seasonal dishes.
