Les Cathédrales de la Saulaie occupies a former limestone quarry beneath street level, with cathedral-like chambers soaring to heights of 12 meters or more. Five dining rooms are carved directly into the stone walls and seat approximately 330 guests in this underground setting.
The site formed millions of years ago when the sea receded from the Doué-la-Fontaine region, exposing shell-rich limestone known as Falun. This material was later quarried during medieval times and beyond before being transformed into a dining venue.
The kitchen focuses on regional dishes like fouées, small bread rolls filled with local ingredients such as butter, rillettes, and white beans that reflect the area's food traditions.
The dining rooms lie deep underground, so finding your way is straightforward once you descend. Visitors should know that natural light is absent and the temperature stays cool year-round, so bringing a light layer of clothing is wise.
