Mala Sichuan Bistro
Mala Sichuan Bistro is a restaurant in Houston's Chinatown that serves dishes inspired by Sichuan cuisine. The menu features hot pots, noodles, and stir-fries prepared with chili peppers and Sichuan peppercorns.
The restaurant was founded by a woman who grew up in Chengdu and missed the authentic cuisine of her homeland after moving to the United States. She opened the bistro over 12 years ago with the goal of introducing Houston to genuine Sichuan flavors.
The name Mala refers to the signature combination of chili peppers and Sichuan peppercorns that creates a distinctive numbing sensation on the palate. This taste experience represents the core of the regional cuisine and defines what visitors come to experience when they walk in.
The restaurant gets busy, especially in the evenings, and you may need to wait a little for a table. The staff is friendly and eager to explain the dishes and recommend options based on your spice preference or familiarity with Sichuan cuisine.
The founder had to be resourceful in sourcing authentic Sichuan peppercorns, which were banned by US agriculture authorities for many years. After the ban was lifted in 2007, she was finally able to import this crucial ingredient to maintain the true taste tradition of her homeland.
