The brewery was founded in 2010 by Josh Deth, who had previously worked at Goose Island Beer Company and learned his craft there. Starting from a single brewpub in Logan Square, it grew to open a separate production facility in Avondale to meet rising demand.

The Logan Square brewpub was used as a filming location for the 2013 movie Drinking Buddies, which depicted daily life inside a working brewery. Some of the winter beers are aged in wood barrels, giving them flavors that do not appear in the rest of the year-round lineup.
