Le Carré d'Alethius

The restaurant opened in 2010, founded by chef Olivier Samin following his seven years working as sous-chef at the renowned Maison Pic. It earned its Michelin star in 2014, establishing itself as a significant dining destination.

The kitchen celebrates the region's food traditions by working with local producers who supply snails, cheeses, and other ingredients sourced directly from nearby farms and artisans.

Lunch is served Wednesday through Saturday between 12:00 and 13:15, while dinner is available Tuesday through Saturday between 19:45 and 21:15. Reservations are essential as seating is limited and tables fill up quickly.

The wine list holds about 500 selections, with a strong focus on bottles from the Rhône Valley, particularly from Saint-Joseph, Cornas, and Saint-Peray regions. This depth allows diners to find wines that pair naturally with the regional dishes.
