Hans Welser founded the operation in 1397 on Neuhauser Straße, before Georg Spät took it over in 1622 and gave his name to the enterprise. Over the centuries the site grew from a small production facility into one of Munich's leading brewery complexes.
The brewhouse demonstrates traditional methods following the Reinheitsgebot purity law, while visitors watch through glass panels as batches are prepared. The cellar museum holds old labels and tools that show how techniques evolved across centuries.
Tours run every Saturday at 3 p.m. in English and require advance booking, with participants needing to be at least 16 years old. The route covers several floors, so comfortable shoes are recommended.
The brewery tower offers a viewing platform where visitors can taste freshly tapped beers while looking out over the old town and the twin spires of the Frauenkirche. Some of the copper kettles in the brewhouse date back to before World War II and remain in operation.
