The Imperial Hotel stands as a two-story brick structure with a prominent facade at 1 Rooty Hill Road North in western Sydney.
Built in 1890 by F J Weston, the hotel initially served visitors attending greyhound racing events at the Woodstock Coursing Track in Plumpton.
The establishment transformed from a traditional hotel to a Penfolds wine bar in 1938, reflecting changes in local social preferences and business adaptations.
The building underwent significant renovations in 1995, expanding its dining space through the conversion of the former courtyard area.
After falling into disrepair and being boarded up in the 1970s, a local dentist purchased the property in 1977 and initiated its restoration.
