Shine Distillery and Grill, restaurant and distillery in Portland, Oregon
Shine Distillery and Grill is a two-story restaurant with on-site distilling on North Williams Avenue in Portland. The space features open dining rooms, bars on both floors, and a rooftop patio where guests can eat while watching spirits like vodka, gin, and bourbon being produced in large copper and steel tanks just a few feet away.
Shine opened after approximately six months of delays from government permit processes and may be Oregon's first establishment combining a full-service restaurant with on-site distilling in a brewpub-style format. Master distiller Shannon Mosley, formerly of McMenamins, leads spirit production and plans to develop single-malt whiskeys using local malts from Madras.
The name Shine refers to the gleaming copper and steel stills visible from the dining area, making the craft of distilling part of the restaurant experience. This approach connects visitors directly to how their drinks are made and reflects a local commitment to transparency and handmade products.
The location sits on North Williams Avenue in a lively neighborhood with good access to public transit and nearby street parking. The restaurant is wheelchair accessible and can seat roughly 250 guests across two levels, with separate spaces that can be reserved for private events or groups. Calling ahead is helpful for larger parties or special occasions.
The establishment operates as a brewpub concept but with a distillery instead of a brewery, distinguishing it from typical Oregon distilleries that are usually small tasting rooms without full restaurants. Chef Julian Solomon blends flavors from his New Orleans heritage with local Portland ingredients, creating dishes like blackened shrimp po'boys and bourbon-stuffed mushrooms.
