Grüne-Soße-Denkmal

The Grüne-Soße-Denkmal consists of seven greenhouse structures made from polycarbonate glass in varying shades of green, each representing a traditional herb. The installation sits at the edge of Oberrad's herb fields and uses its transparent design to connect the artwork with the surrounding landscape.

The monument was inaugurated on May 21, 2007, becoming Germany's first memorial dedicated to a regional dish. Funded by Regionalpark RheinMain SüdWest, it marked official recognition of green sauce as central to Frankfurt's cultural heritage.

Each of the seven greenhouse structures displays the name of an essential herb used in Frankfurt's green sauce: borage, chervil, cress, parsley, burnet, sorrel, and chives. The arrangement reflects the deep connection between these plants and the city's culinary identity.

The monument sits near Speckgasse at the edge of Oberrad's herb fields and remains accessible year-round. Lighting effects activate shortly after sunset, making evening visits particularly rewarding for experiencing the full visual impact.

The translucent surfaces of the greenhouses reflect the Frankfurt skyline and create a distinctive glow during evening hours. This optical effect transforms the monument into a dynamic installation that changes appearance depending on time of day and lighting conditions.
