Kanda is a Japanese restaurant located inside the Toranomon Hills Residential Tower in Minato-ku, Tokyo. It has a small number of counter seats arranged directly in front of the open kitchen, with no other seating in the room.
Chef Hiroyuki Kanda opened the restaurant in 2008 and received a Michelin star that same year. Over time, it became known not only for its own cooking but also for training chefs who went on to open their own places.
Kanda follows the kappo tradition, where cooking and serving happen at the same counter, and guests watch each dish take shape in front of them. This format is deeply rooted in Japanese culinary culture and shapes how the meal is experienced from start to finish.
Kanda serves dinner only and requires a reservation made well ahead of the visit, as the few available seats fill up fast. Guests arriving for the first time should be aware that the entrance is inside a residential tower and may take a moment to find.
