Brewery in Sobótka

The brewery in Sobótka operates from a stone building and produces beer using traditional bottom fermentation and natural maturation without added CO2. The range includes unfiltered and unpasteurized varieties with different sugar levels that take two to three months to mature.

The building was founded in 1817 and produced continuously until 1997, when three local residents revived it using original recipes. The reopening returned the facility to its roots through the knowledge of workers from the earlier era.

The brewery keeps alive traditional brewing methods that shape how the beer tastes and looks. Former workers still share their knowledge with the current team, connecting past and present through their craft.

The site is best reached on foot and the building is easy to access as it sits near the town center. Visitors should check in advance about tours, as production follows set schedules.

A 75-year-old former employee reconstructed the pre-war recipe using only smell and taste to guide him. His memory allowed the brewery to restore authenticity without written records.
