The restaurant opened in January 2015 and took its name from Wilbur Scoville, the chemist who created the scale for measuring chili pepper heat. This naming choice links Mexican cuisine to the scientific history of measuring spice intensity.
The walls feature artwork showing different chili pepper varieties and their heat levels, created by Toronto artist Justin Broadbent. These pieces turn the dining space into a visual celebration of Mexican ingredients and their properties.
A self-serve salsa station with around 60 different hot sauces lets customers personalize their meals after ordering at the counter. This setup allows each visitor to control the heat level of their food.
An apothecary cabinet filled with dried chilis sits within the space, connecting the laboratory theme to actual ingredients. This collection displays the building blocks of the kitchen as part of the science-inspired design.
