Wilderness Trail Distillery, Whiskey distillery in Danville, Kentucky, United States.
Wilderness Trail Distillery is a bourbon distillery in Danville, Kentucky, where grain is transformed into spirits through traditional copper stills and aging in oak barrels. The operation spans multiple buildings designed to handle each stage of production.
The operation started in 2013 when Shane Baker and Pat Heist transformed their fermentation consulting business into a spirits producer. Their experience in fermentation became the foundation for the distillery's approach to production.
Local grain farmers from the region supply corn, wheat, and rye for production. This partnership with nearby agricultural communities shapes the character of the spirits made here.
Visitors can tour the facility Monday through Saturday with guides who explain the production steps and how fermentation affects flavor. Tastings are included at the end of each tour experience.
Most bourbon makers in Kentucky use a sour mash fermentation technique, but this distillery chose a sweet mash approach instead. This difference in fermentation creates noticeably different flavors in the finished spirits.
