Estate Judith's Fancy is a historic plantation on Saint Croix with several well-preserved buildings from the sugar processing era. The site includes residential structures, processing buildings, and outbuildings that together give a picture of the production facility.
The plantation was established in 1733 and played an important role as an administrative center during French occupation of the island. Later it developed into a center for sugar processing and agriculture.

The name Estate Judith's Fancy comes from a landowner who named the plantation after his daughter, which reflects the personal story behind the place. Originally known as Hemmers Plantation, it received this affectionate name that has lasted to this day.
