Patrick O'Brien and George Crisp established the Defiance Flour Mill in 1898, relocating to its current Ruthven Street location in 1901.
The industrial complex contributed to Queensland's development by processing regional wheat crops and providing employment for local residents.
The mill expanded its operations to include administrative offices, retail spaces, and storage silos, becoming Queensland's largest flour producer by 1987.
Ellen O'Brien managed the mill after her husband's death in 1906, raising ten children while directing operations to full ownership.
