The Grand Priory of Saint-Gilles stands as a substantial religious complex with buildings arranged around central courtyards within Saint-Gilles town limits.
Founded in 1109 by Bertrand of Saint-Gilles before his departure to the Holy Land, this priory became the first European house of the Order of Saint John.
The priory managed 54 commanderies throughout Provence, functioning as a central administrative hub for knights and religious activities in southern France.
The buildings underwent extensive modifications through centuries, with parts of the medieval structure remaining visible in the northern and eastern sections.
During its peak, the priory controlled approximately 24,000 hectares of land, including agricultural fields, marshes, and renowned vineyards producing Mourvèdre wine.
