Ivo a Trastevere, Pizzeria in Trastevere, Rome, Italy.
Ivo a Trastevere is a pizzeria and restaurant on Via di San Francesco a Ripa in the Trastevere neighborhood of Rome. Inside, four dining rooms feature exposed brick arches and painted walls, while a row of outdoor tables lines the street in front.
Ivo Stefanelli opened the place in the 1960s, starting with a pastry shop that he gradually turned into a full pizzeria. The style he developed in those early years has stayed consistent ever since.
The pizzeria is known for Roman-style thin-crust pizza baked in a wood-fired oven, a tradition deeply tied to this neighborhood. Eating outside at the tables along the street is part of how locals and visitors alike experience Trastevere in the evening.
The restaurant opens in the evening most days and also offers Sunday lunch, but is closed on Tuesdays. Arriving early is a good idea if you want a table outside, as the street seating fills up quickly.
One of the most requested pizzas here comes topped with prosciutto, thinly sliced mushrooms, black olives, and an egg cooked directly on the pizza as it bakes. This topping combination was invented by the founder and has never been removed from the menu.
