The first location opened in Houston, Texas in 1986, founded by John Charles Carrabba Jr. and his uncle Damian Mandola. The two built their menu around recipes passed down through their Sicilian family over several generations.
The restaurant takes its name directly from the founding family, and that personal touch carries through to the menu. Several dishes are named after real family members, like Pollo Rosa Maria, which was named after one of the founders' aunts.
