107–109 George Street, The Rocks

107–109 George Street, The Rocks, Heritage restaurant and retail building in The Rocks, Australia.

107-109 George Street is a four-story sandstone building with unrendered brick walls and a hipped roof crowned with chimneys in Victorian Regency style. The ground floor contains a restaurant while upper floors house additional commercial spaces within the heritage structure.

The site was originally part of Sydney's first hospital grounds established in 1788 and later became a government stone quarry before Patrick Freehill built the current structure in 1860. The building has since operated continuously as a commercial and dining venue.

The place has served different commercial purposes over many decades, from a public house to retail spaces and now a dining venue. Today it remains a working space where people learn hospitality skills and guests enjoy meals in a historic setting.

The building is easily accessible on foot and located in a bustling commercial area with many other shops and restaurants nearby. Visitors should expect it to be busy during peak meal times, particularly at lunch and dinner.

The building operates as a training ground where aspiring hospitality professionals work and learn from experienced staff in a functioning restaurant. This blend of heritage venue and active training facility creates an unusual dining experience where visitors support ongoing education.
