Joey Redner founded the brewery in 2009 to create beers reflecting Tampa's local flavors and heritage. The first brew was Maduro Brown Ale in January 2009, followed by popular varieties like Jai Alai IPA and Florida Cracker White Ale.
The brewery's name reflects Tampa's history as a cigar-making center, and the beers honor local traditions through their names. Jai Alai references a sport popular in Florida, while Guayabera pays tribute to the Cuban shirts worn in the region, connecting each drink to the city's cultural fabric.
The tasting room is open Sunday through Thursday from 11 am to 10 pm, and Friday and Saturday until 1 am. Visitors can enter at no charge to sample various beers, with a full kitchen available and options to purchase beer to take home.
Every March, a special beer called Hunahpu's Imperial Stout is released, accompanied by a large festival that draws thousands of beer enthusiasts. Brewers from around the world come to pour their beers and participate in this distinctive event.
