Hertog Jan, Fine dining restaurant in Zedelgem, Belgium
Hertog Jan was a fine dining establishment in Zedelgem where Chefs Gert De Mangeleer and Joachim Boudens developed sophisticated dishes rooted in produce they grew themselves. The menu changed regularly based on what the garden provided and the season's natural rhythms.
The restaurant opened in 1992 and relocated from Bruges to Zedelgem in 2014 before closing at the end of 2018. This move to the countryside represented a shift in the chefs' vision and gave the project a new setting away from the city.
The restaurant represented a philosophy where vegetables and herbs from the garden held equal importance to meat and fish on the plate. Diners experienced an approach that valued ingredient quality and seasonal awareness as expressions of respect for the source.
The restaurant did not operate every day and served meals at fixed times with limited availability throughout the month. Visitors needed to plan ahead and secure reservations well in advance due to the restricted schedule.
Following its closure, the chefs reinvented the concept as a Japanese omakase-style dining experience that reopened at another location. This transformation demonstrates how the original vision evolved into an entirely different culinary language and setting.
