The building dates to the 19th century, when it was constructed as a winery, and was later used for intelligence operations. Its conversion into a bar and museum opened the space to the public in a very different role.
The bar takes its name seriously: the collection is arranged and presented more like an exhibition than a drinks menu. Guests can compare bottles from Scotland, Ireland, and Asia side by side, tracing how different distilling traditions shaped each style.
