Culinary Institute of America at Greystone, culinary college in St. Helena, California
The Culinary Institute of America at Greystone is a professional cooking school housed in a large stone building from the 19th century in St. Helena, in the heart of Napa Valley, California. The building contains several teaching kitchens, classrooms, and dining areas that are in active use throughout the school year.
The building was constructed in 1889 as a private winery and estate, and it changed hands several times before being repurposed for education. The Culinary Institute of America took over the property in the late 20th century and turned it into a campus focused on cooking and the culinary arts.
The school draws students and chefs from many countries, giving the place a lively mix of languages and cooking styles. On any given day, you might catch the smell of something baking or see a class working through a recipe in one of the open kitchens.
The campus sits along Highway 29, the main road through Napa Valley, and is easiest to reach by car. It is worth checking in advance whether public events or tours are available, since teaching activities take up much of the space on most weekdays.
The building is listed on the National Register of Historic Places, making it one of the few working schools in the country housed in a formally protected historic structure. The thick stone walls, originally built to keep wine cool, now surround the teaching kitchens where students cook every day.
