Hamafukutsuru Ginjō Kōbō

Hamafukutsuru is a sake brewery and museum in Kobe with a glass-walled design that reveals the complete production process from start to finish. The layout shows how rice is prepared, mold cultures are developed, and sake ferments in large tanks using traditional methods.

This brewery began production during the early Meiji period around 1900 and became an important part of local industry. It endured major disruptions in the 20th century and was reconstructed, continuing to operate as a working facility.

The brewery showcases time-honored brewing techniques that define local craftsmanship and have been passed down through generations. Visitors witness how skilled workers handle each stage of production with methods that reflect regional heritage.

The site is easy to navigate and offers guided tours through working areas where you can watch production in action. A tasting counter lets visitors sample different varieties, and a sales shop carries products directly from the maker.

The facility uses underground water sources from Mount Rokko and grows a specific rice variety prized for sake production. A signature product made from these local ingredients has earned international recognition.
