Kameido Gyoza Honten, Gyoza specialist in Koto, Japan
Kameido Gyoza Honten is a gyoza-only restaurant in Koto, right in front of Kameido Station, where all seating is at a counter. The menu has just one item: pan-fried dumplings with a crispy bottom, served in a straightforward, no-frills setting.
The restaurant opened in 1953 and has kept the same recipe and serving style ever since. It is now one of the oldest gyoza spots in Tokyo still running under its original format.
The restaurant serves plates of five dumplings in a continuous flow until you signal that you want to stop. This way of eating sets its own pace at the table and feels quite different from ordering dish by dish.
The restaurant is open every day but closes once it runs out of food, which usually happens around 18:30. Going early in the day or after the lunchtime rush gives you a better chance of finding a seat.
At the end of the meal, the empty plates are stacked and counted at the counter to calculate the bill. This lets the staff work out the total at a glance without having tracked each round individually.
