默爾 pasta pizza, Italian restaurant in Xinyi District, Taipei, Taiwan.
默爾 pasta pizza, also known as Moor, is a pizzeria and Italian restaurant located inside the Eslite Xinyi branch in the Xinyi District of Taipei, Taiwan. The menu centers on wood-fired pizzas and handmade pasta prepared with natural ingredients and traditional Italian cooking methods.
The concept started as a small street-side shop in Taichung in 2007 and later expanded into department stores across Taiwan. What began as a single local spot eventually grew into a chain with locations in different parts of the island.
The kitchen avoids artificial flavor enhancers and relies on natural seasonings, which is something regulars say they notice in every bite. This approach gives the food a cleaner, more direct taste than many other Italian spots in Taipei.
The restaurant is wheelchair accessible and easy to reach inside the Eslite Xinyi building. It tends to fill up quickly, especially on weekends, so booking ahead online is a good idea.
The pizza dough develops a spotted, leopard-like crust during baking, a result of the high heat from the wood-fired oven that creates a crispy outer layer and a soft, chewy center. This style of crust is rarely seen in Taiwan outside of specialist Italian restaurants.
