Korallo, Pizzeria in San Donà neighborhood, Trento, Italy
Korallo is a pizzeria in Trento, Italy, that bakes pizza in the Neapolitan style using a wood-fired oven. The dough is made from whole grain or multi-grain flour and rises slowly before baking.
Bruno Costanzo, originally from Naples, opened the restaurant in Trento with his wife Monica and their sons Davide and Gabriele. The family brought pizza traditions from southern Italy to this northern city.
The name Korallo reflects the Neapolitan roots of its founder and the connection to southern Italian pizza traditions. Visitors experience this Mediterranean heritage in how the pizzas are prepared and presented at the table.
The restaurant is on Via Venezia and easy to reach on foot. It is open for lunch and dinner on weekdays, and for dinner only on weekends.
The menu lists six different versions of the Margherita, which is rare for a single pizzeria. One of them is the Stella dolce, a star-shaped pizza filled with Nutella, pastry cream, and fresh fruit.
